Special thanks to StPete.LocallyGrown.net for the fresh leafy greens in this salad. It is great to have such a great resource for produce that has not been sprayed with chemical pesticides.
Doesn’t this salad just look beautiful? And it tastes great too.
The strawberries are locally grown and in season right now in Florida. They will be coming in season soon in other parts of the country too.
Berry Delicious Alkaline Salad
Pre-cook a sweet potato sliced up in a bit of water.
Drain the water, add coconut oil, zucchini and sliced mushrooms, or other vegetables of your choice.
Cook lightly on a low medium heat.
For the salad dressing I am using olive oil, apple cider vinegar, sea salt and some herbs.
Top it off with rosemary and a sliced radish. YumFest!
Check out the video for all the details. You could easily vary this recipe based on seasonal availability. Blueberries, raspberries or even grapes could be used on this salad.
