What a way to start the day. I fired up a quick smoothie at home, added a few extra ice cubes and headed for the park.
I got to enjoy this fresh smoothie in the open air and sunshine.
This smoothie provides healthy fats, protein, low-moderate carbohydrates, vitamins minerals and anti-oxidants. A great breakfast!
Green Picnic Smoothie Ingredient List
- Chia seeds
- Coconut, unsweetened
- Local organic greens
- Kiwi fruit
- Moringa leaf powder
- Almond milk
- Purified water
- Ice cubes
Start by putting the chia seeds and coconut in the blender. Add about 1 cup of purified water and let that soak for at least 10 minutes. Then I added fresh, locally grown organic greens such as Ceylon spinach, Dawn dewa and Okinawa spinach. All greens that grow well in the hot summer, when lettuces and other leafy greens are just bolting. Then throw in the kiwi fruit. Add about a TBS of moringa powder for a good protein source. Top it off with some almond milk. Blend it all up and add some ice cubes to keep it cold.
Then I capped it off and headed for the park. Check out the beautiful view I enjoyed while I sipped my smoothie and got some work done on the laptop.
